Cheese-Stuffed Poblano Peppers

Roasted and peeled poblano peppers, stuffed with Oaxaca cheese, egg-battered and served in red tomato salsa.

  • Chiles poblanos
    6 unidades
  • Queso Oaxaca
    400g
  • Huevos
    6 unidades
  • Harina
    100g
  • Tomates rojos
    500g
  • Cebolla
    1/2 unidad
  • Ajo
    2 dientes
  • Aceite para freír
    300ml

    Char the poblano peppers directly over the flame.

    Place them in a plastic bag for 10 minutes.

    Peel the chiles carefully.

    Make a side cut and remove the seeds.

  5. 5

    Fill each chile with Oaxaca cheese strips.

    Prepare the batter by whipping egg whites to stiff peaks.

    Add yolks and flour tablespoon by tablespoon.

    Dust the chiles with flour then dip in batter.

    Fry in hot oil until golden.

    Serve smothered in tomato salsa.
