  • Mascarpone
    500g
  • Huevos
    4 unidades
  • Azúcar
    100g
  • Bizcochos savoiardi
    300g
  • Café espresso
    300ml
  • Cacao puro
    para espolvorear

    Brew strong espresso and let cool.

    Separate egg whites from yolks.

    Beat yolks with sugar until pale.

    Add mascarpone and fold gently.

    Whip egg whites to stiff peaks.

    Fold whites into mixture gently.

    Quickly dip savoiardi in coffee.

    Place a layer in dish, cover with cream.

    Repeat with another layer of biscuits and cream.

    Dust with cocoa and refrigerate 4 hours minimum.
