Cut eggplants into cubes and salt, let sit 30 minutes. 2. Fry eggplants in abundant oil until golden. 3. Prepare tomato sauce with garlic, basil and olive oil. 4. Cook pasta in salted water until al dente. 5. Mix pasta with tomato sauce. 6. Serve with fried eggplants and grated ricotta salata on top. 7. Decorate with fresh basil leaves.
