Amatriciana Pasta

Classic Roman dish from Amatrice with guanciale, tomato, onion, pecorino and peperoncino. Intense flavors.

  • Bucatini
    400g
  • Guanciale
    200g
  • Cebolla
    1 grande
  • Tomate triturado
    400g
  • Pecorino romano
    80g
  • Peperoncino
    1 cucharadita

    Cut guanciale into strips and fry until fat renders. 2. Remove guanciale and reserve, leaving fat in pan. 3. Add chopped onion to fat and sauté until golden. 4. Add crushed tomato and peperoncino, cook 15 minutes. 5. Cook pasta in salted water until al dente. 6. Add reserved guanciale to sauce and pecorino. 7. Toss pasta with sauce and serve with more pecorino.
