    Clean and cut assorted fish.

    Sauté chopped onion, garlic and leek.

    Add tomato and saffron.

    Add firmer fish first.

    Cover with water and cook 30 minutes.

    Add more delicate fish.

    Cook 15 more minutes.

    Prepare rouille with garlic and oil.

    Serve broth with fish and toasted bread.

    Accompany with rouille sauce.
