Iberico Ham Croquettes

Creamy croquettes with bechamel of acorn-fed Iberico ham, breaded and fried until golden and crispy.

  • Leche entera
    500ml
  • Mantequilla
    60g
  • Harina de trigo
    60g
  • Jamón ibérico picado
    150g
  • Nuez moscada
    1 pizca
  • Harina para rebozar
    100g
  • Huevos
    3 unidades
  • Pan rallado
    200g
  • Aceite de oliva para freír
    500ml
  • Sal
    al gusto

    Melt butter in a saucepan over medium heat.

    Add flour and cook 2 minutes stirring constantly.

  3. 3

    Pour hot milk little by little, whisking constantly.

  4. 4

    Cook bechamel 10 minutes until thick.

  5. 5

    Add chopped ham, nutmeg and salt.

  6. 6

    Cook 5 more minutes and pour into a tray.

  7. 7

    Cool 4 hours or overnight.

  8. 8

    Form croquettes and coat in flour, egg and breadcrumbs.

    Fry in hot oil at 180C until golden.

  10. 10

    Drain on paper towels and serve immediately.
