Authentic Cuban salad of tender cassava with pickled onion and mojo of garlic and sour orange.

  • Yuca
    500g
  • Cebolla morada
    1 grande
  • Vinagre
    3 cucharadas
  • Aceite de oliva
    4 cucharadas
  • Ajo
    4 dientes
  • Zumo de naranja agria
    60ml
  • Comino
    1 cucharadita
  • Perejil fresco
    20g
  • Sal
    al gusto

    Boil beets with skin for 45-60 minutes until tender.

    Peel beets and grate or cut into small cubes.

    Finely mince garlic and mix with beets.

    Add chopped walnuts and prunes in pieces.

    Incorporate mayonnaise and garlic, mix well.
