Traditional Filipino salad of grilled eggplant with tomato, onion and cane vinegar dressing.

    3 medianas
  • Tomates
    2 unidades
  • Cebolla
    1 pequena
  • Jengibre
    2cm
  • Vinagre de cana
    3 cucharadas
  • Salsa de pescado
    1 cucharada
  • Chile verde

    Grill eggplants directly over flame until skin is charred. 2. Let cool and peel burnt skin, leaving tender flesh. 3. Shred eggplant flesh with fork. 4. Dice tomatoes, onion and ginger into small cubes. 5. Mix eggplant with chopped vegetables. 6. Add cane vinegar, fish sauce and chopped chili. 7. Serve as side dish for grilled meats or fish.
