Refreshing cold soup of ripe tomatoes, cucumber, bell pepper and garlic, emulsified with extra virgin olive oil. The perfect dish for hot Andalusian summer days.

  • Tomates maduros
    1 kg
  • Pepino
    200g
  • Pimiento verde
    100g
  • Ajo
    2 dientes
  • Pan del día anterior
    100g
  • Aceite de oliva virgen extra
    100ml
  • Vinagre de Jerez
    30ml
  • Sal
    al gusto

    Blanch tomatoes in boiling water for 30 seconds, then peel and remove seeds.

    Peel the cucumber and cut into large chunks.

    Clean the green pepper and chop it.

    Peel garlic cloves and remove the central germ.

    Blend all vegetables with a hand blender.

    Add the soaked bread and vinegar.

    Emulsify with olive oil in a thin stream.

    Season with salt to taste.

    Strain the gazpacho for a smoother texture.

    Refrigerate at least 2 hours before serving.
