  • Pollo troceado

  • Conejo troceado

  • Judías verdes planas
    200g
  • Garrofó (alubias blancas grandes)
    150g
  • Tomate maduro rallado
    100g
  • Aceite de oliva
    150ml
  • Pimentón de la Vera
    1 cucharadita
  • Azafrán en hebras
    1g
  • Agua
    1.2 litros
  • Sal
    al gusto

    Heat oil in paella pan over medium heat.

    Brown chicken and rabbit pieces until well coloured.

    Add green beans and garrofo, saute 5 minutes.

    Add grated tomato and cook until darkened.

    Add paprika and saffron, stir quickly.

    Pour hot water and boil 20 minutes.

    Add rice in cross shape, distribute evenly.

    Cook on high heat 10 minutes, then low heat 8 minutes.

    Rest 5 minutes before serving.

    The socarrat on the bottom is the treasure.
