Neapolitan Margherita Pizza
The pizza that honored Queen Margherita: thin crispy crust with San Marzano tomato sauce, buffalo mozzarella and fresh basil. A taste of Naples.

Mix flour with water and yeast.

Add salt and knead 10 minutes.

Ferment 8 hours in the refrigerator.

Remove dough and divide into 4 portions.

Stretch each portion by hand without rolling pin.

Spread crushed tomatoes leaving a border.

Distribute mozzarella in pieces.

Bake at 450°C in wood-fired oven for 90 seconds.

Add fresh basil when out of oven.

Finish with a drizzle of olive oil.
