Spanish Potato Omelette

Spain's national dish in its classic version with onion. Potatoes slowly poached in olive oil, set with egg to perfect doneness.

  • Patatas
    800g
  • Huevos
    6 unidades
  • Cebolla
    1 grande
  • Aceite de oliva
    300ml
  • Sal
    al gusto

    Peel potatoes and slice thinly.

    Cut onion into thin julienne.

    Heat plenty of oil in a large pan.

    Poach potatoes and onion over low heat for 25 minutes.

    Drain excess oil and season.

    Beat eggs with a pinch of salt.

  7. 7

    Mix potatoes with egg, rest 5 minutes.

  8. 8

    Set omelette over medium heat for 3 minutes per side.

  9. 9

    Use a plate to flip carefully.

  10. 10

    Serve hot, warm or cold.
