Cantonese Fried Rice with Shrimp and Ham
King of Asian fried rice: each grain separate and perfumed with wok hei (breath of the wok), juicy shrimp, cured ham and the golden touch of egg. A classic from Chinese restaurants.

✓Ajo3 dientes

✓Jengibre fresco20g

✓Salsa de soja3 cucharadas

✓Salsa de pescado1 cucharada

✓Azúcar1 cucharadita

✓Aceite vegetal4 cucharadas

Cook jasmine rice following package instructions. Let cool.

Beat eggs with a pinch of salt. Make a thin omelette and set aside.

Heat oil in a wok over very high heat until smoking.

Add garlic and ginger. Stir-fry 30 seconds.

Add serrano ham cubes and stir-fry 1 minute.

Add peeled shrimp and cook until pink.

Add cold rice and stir-fry 3-4 minutes stirring constantly.

Create a well in the center and pour beaten eggs.

Stir quickly for eggs to set in small pieces.

Add soy sauce, fish sauce and sugar.

Add peas, omelette strips and chives.

Serve immediately decorated with more fresh chives.
