  • Arroz jazmín
    400g cocido
  • Gambas peladas
    200g
  • Jamón serrano
    100g
  • Huevos
    4 unidades
  • Ajo
    3 dientes
  • Jengibre fresco
    20g
  • Guisantes

  • Salsa de soja
    3 cucharadas
  • Salsa de pescado
    1 cucharada
  • Azúcar
    1 cucharadita
  • Aceite vegetal
    4 cucharadas
  • Cebollino fresco

  • Sal
    al gusto

    Cook jasmine rice following package instructions. Let cool.

    Beat eggs with a pinch of salt. Make a thin omelette and set aside.

    Heat oil in a wok over very high heat until smoking.

    Add garlic and ginger. Stir-fry 30 seconds.

    Add serrano ham cubes and stir-fry 1 minute.

    Add peeled shrimp and cook until pink.

    Add cold rice and stir-fry 3-4 minutes stirring constantly.

    Create a well in the center and pour beaten eggs.

    Stir quickly for eggs to set in small pieces.

    Add soy sauce, fish sauce and sugar.

    Add peas, omelette strips and chives.

    Serve immediately decorated with more fresh chives.
