    1.5 kg
  • Vino tinto de Borgoña
    750ml
  • Champiñones
    250g
  • Cebollitas francesas
    200g
  • Lardones
    150g
  • Caldo de pollo
    250ml
  • Tomate concentrado
    2 cucharadas
  • Mantequilla
    50g
  • Ajo
    2 dientes
  • Tomillo, laurel
    al gusto

    Cut chicken into 8 pieces and season.

    Marinate in red wine with herbs for 4 hours.

    Drain and pat dry the pieces.

    Brown chicken in butter in batches.

    Sauté pearl onions and mushrooms.

    Add wine from marinade and broth.

    Add tomato paste and garlic.

    Cook covered on low heat 1.5 hours.

    Add crispy lardons at the end.

    Thicken sauce with flour if needed.
