  • Mango maduro
    1 grande
  • Aguacate
    2 unidades
  • Pepino
    1 unidad
  • Tomates cherry
    150g
  • Cebolla morada
    1/2 unidad
  • Judías negras
    200g cocidas
  • Cilantro fresco
    30g
  • Jalapeño
    1 unidad
  • Zumo de lima
    4 cucharadas
  • Aceite de oliva
    3 cucharadas
  • Miel
    1 cucharada
  • Sal y pimienta
    al gusto

    Cook quinoa according to package instructions. Let cool.

    Dice mango, avocado, cucumber and cherry tomatoes.

    Finely chop red onion, cilantro and jalapeño.

    Mix lime juice, olive oil, honey, salt and pepper.

    In a large bowl, combine cooled quinoa with chopped vegetables.

    Add mango, avocado and cherry tomatoes.

    Add onion, cilantro and jalapeño.

    Pour dressing and mix gently to not mash avocado.

    Add drained black beans.

    Adjust salt and add more lime juice if needed.
