National dish of Laos with spiced minced meat, fresh herbs and toasted rice powder. Explosive and aromatic.

  • Arroz glutinoso
    3 cucharadas
  • Carne picada de cerdo
    400g
  • Zumo de lima
    4 cucharadas
  • Salsa de pescado
    3 cucharadas
  • Chiles rojos

  • Cebolla morada
    1 pequeña
  • Menta fresca
    30g
  • Cilantro

  • Cebolletas

    Toast glutinous rice in a dry pan until golden and fragrant.

    Let rice cool and grind in a mortar until coarse powder.

    Cook minced meat in hot pan without oil, crumbling while cooking.

    Remove from heat when meat is done and mix with lime juice and fish sauce.

    Add toasted rice powder, chopped chilies, red onion and fresh mint.

    Incorporate cilantro and green onions, adjust flavor with more lime or fish sauce.

    Serve over lettuce with sticky rice or wrapped in lettuce leaves.
