Apple Pie
Classic homemade apple pie with crispy shortcrust pastry, caramelized apple filling and cinnamon. The traditional dessert.

Prepare the shortcrust pastry: mix the flour with salt in a bowl. Add the cold butter cut into cubes and work it with your fingers until you get a sandy mixture. Add the beaten egg and 2-3 tablespoons of cold water. Form a ball without overworking, wrap in plastic and refrigerate 30 minutes.

While the dough rests, peel the apples, core and cut them into thin slices. In a bowl, mix with the sugar, cinnamon, lemon juice and a pinch of salt. Let macerate 15 minutes.

Preheat the oven to 180°C. Roll out the dough on a floured surface to get a circle about 3mm thick. Line a 22-24 cm springform tart pan. Prick the base with a fork.

Bake the base blind (with parchment paper and pie weights on top) for 15 minutes. Remove the paper and weights and bake 5 more minutes until lightly golden.

Drain the juice released by the apples. Place the slices in concentric circles on the baked base, slightly overlapping. Sprinkle with sugar and cinnamon on top.

Bake at 180°C for 35-40 minutes until the apples are tender and golden.

Heat 2 tablespoons of apricot jam with a little water and brush the pie fresh out of the oven to give it shine.

Let cool completely before unmolding and serving.
