Vegetable and Shrimp Tempura

The most delicate Japanese fried dish: light and crispy batter over fresh vegetables and shrimp, served with tentsuyu sauce.

  • Harina de trigo
    150g
  • Maicena
    50g
  • Agua muy fría
    250ml
  • Gambas grandes
    200g
  • Calabacín
    1 unidad
  • Berenjena
    1 unidad
  • Pimiento rojo
    1 unidad
  • Zanahoria
    1 unidad
  • Aceite para freír
    500ml

    Keep water very cold with ice.

    Mix flour and cornstarch lightly.

    Add cold water and mix with chopsticks.

    Do not overmix, lumps are okay.

    Cut vegetables into thin slices.

    Peel shrimp leaving the tail.

    Dust with flour then dip in batter.

    Fry in oil at 180°C in batches.

    Drain on rack, not paper.

    Serve immediately with tentsuyu sauce.
